Chocolate, Chocolate Cookies

I am serious when I say that this is my favorite cookie recipe. There is only one recipe which rivels it which is my best friend's grandmother's oatmeal chocolate chip cookies.

These cookies are for the chocolate obsessed. They will delight your tastebuds and fill your kitchen with the sweetest aroma.

Tamales

Yes! I had so much fun with this particular recipe. I have never attempted to do an authentic mexican recipe but seeing how I love mexican food I had to do it at one point or another.
WARNING
This recipe takes a lot of time (3 hours to cook the pork, 30-45 Minutes to prepare the tamales, and another 1.5 hours to steam!) I did it in two days. I cooked the pork the first day and cooked the tamales the next.
Although they take a good amount of time to prepare, they are soooo delicious!

Mushroom Risotto and with peas

Risotto is so simple to make that you will WOW all at your ability to multi-task in the kitchen. My mom loves to cook risotto because it is both fun to make and a serious crowd pleaser. Serve this along side any chicken, steak, or even a roasted vegi terrine.

Chicken stuffed with Spinach, Craisins, and Panko

As promised...here is my recipe for a spinch stuffed chicken! It is a derivative of a recipe from the NY Times. I gave it a go last night at a small gatherine we had. Not only was it wonderful to taste but the presentation on this dish is superb. You will look like a master chef with this one yet it is oh so simple :)
